Chicken Noodle Soup

I’m so sorry that this site has been so woefully neglected this past month.  I had grand intentions of updating frequently, but real life (and hockey playoffs) have totally consumed my life lately.

However, today I discovered a new recipe that I wanted to share with you.  I’ve had the sore throat from Hades for the past 2 days, so I was feeling in the mood for some comfort food.  I’d never made chicken noodle soup from scratch before, so I did some searching on ye olde internets.  I gave the Food Network sites a good search, but nothing interesting was showing up, so I headed to good old Mr. Google, and came up with a winner.  Here’s the original recipe, but I modified it slightly:

  • 1.5 packs of 900mL chicken broth
  • 1/4 cup chopped carrots
  • 1/4 cup chopped celery
  • 1 tablespoon finely chopped onions
  • 1 tablespoon chopped fresh parsley
  • 1/8 teaspoon poultry seasoning
  • 1/8 teaspoon thyme (all I had was ground, and that works just fine)
  • 1 1/2 cups diced chicken
  • 1 cup noodles (I used macaroni)

Combine first 7 ingredients, and cook at med-high heat until veggies are soft, stirring occasionally.

Add noodles and when they’re almost cooked, add the chicken.  Simmer for a few more minutes.

Serve and enjoy!

The soup was so tasty and exactly what my sore throat needed.  It’s nothing fabulously fancy, but if you’re looking for an easy and delicious chicken noodle soup recipe, this one’s a gooder!
